This report is a quantification of the true cost of food waste in the UK’s Hospitality and Food Service industry.

More recent headline figures for food waste in the sector have been published in the Courtauld Commitment 2025 Milestone Progress Report.

The report shows that food waste costs the UK HaFS sector an estimated £2.5 billion per year, and that this will rise to nearly £3 billion per year by 2016 if no action is taken.

In an industry comprising circa 260,000 outlets in the UK, the annual cost of food waste equates to around £10,000 per outlet each year. This study shows that a 5% reduction in food waste equates to a sector-level saving of £250 million over two years.
